I don't care who you are,you need to eat comfort food now and then. I'm all for eating healthy and watching your weight and God knows I need to do something about mine,but eating a big old fat juicy hamburger and fresh cooked fries just floats my boat.
So with that bit of information off my chest,this is my plan for 2012.
I plan to put a recipe of comfort food on my blog everyday. I plan to write on my blog everyday. And I want to put this out there,I am not a writer. I spell awful(thank goodness for spell check). I need a secretery to fix my grammar and putting sentences together correctly. But that is not going to happen on this blog. I will do my best. Really this is all about comfort food. Like, we need another food blog. So I say "you bet we do",so here we go........
New Years Day,you have to have black eye peas,cornbread and steamed cabbage with bacon.
Cabbage & Bacon
1 package of bacon(your choice)
1 big head of cabbage
I take the bacon out of the package and cut it into 4 pieces. I put the pieces into a big fry pan and fry it up. Make sure you pick apart the bacon so you don't have a blob of it frying up by it's lonesome. Get it nice and brown,then add 1/4 cup of water.
Cut the cabbage in half and then four sections for each half. Put cabbage into bacon bits and fry on medium heat. Put a lid on the pan. Go back in flip the cabbage up and over so every cabbage piece gets browned.
Now you can add diced onions if you want. Let the cabbage cook down about 30 minutes. Watch it and don't have the pan up to high,you don't want it to burn.
Enjoy,I add a little red vinegar to my cabbage,it's good for your soul!!
